Chicken Shawarma Sandwiches

Ottolenghi recipes are always a joy to make. There are a lot of components, but each one is simple and the process of bringing them all together is really satisfying. The chicken is great on its own, but the toppings really make it. The pickled onions, tahini sauce, zhug, and fresh herbs all come together for something special. Also works well as a salad instead of a sandwich.
